Breathtaking Australian landscapes, exotic wildlife, world-class wine, and innovative cuisines await on this 15-day journey off the beaten path. Start with three nights in Adelaide, gateway to South Australia's famous wine country; tour the ethnically-diverse, gourmet-friendly town by Segway or pedicab; embark on an off-road adventure in Onkaparinga National Park; tour wineries in Barossa Valley, Australia's premier wine-making region. On to Melbourne to explore its trendy backstreets and laneways (and taste its famous coffee); take the Great Ocean Road to stunning seascapes of sheer cliffs, beaches and towering rock formations. Fly to Tasmania and spend two nights at a world-class resort in on the Freycinet Peninsula for a choice of outdoor activities. Day 1: Arrive Adelaide

Tour begins 5:00 PM. Welcome to Adelaide, the laidback capital city of South Australia, and gateway to Barossa Valley wine country. A transfer is included from Adelaide Airport to the 5-star Mayfair Hotel in the heart of the city, overlooking the Rundle pedestrian mall. Join us at the National Wine Centre of Australia for a welcome reception and dinner featuring wines from the Barossa Valley.

Day 2: Barossa Valley Wine Country

Begin the day with a drive to Barossa Valley, Australia's premier wine region, a landscape of flatlands, creeks, and lush rolling hills. Stop at Jacob Creek Winery, where an expert will guide you in creating your own blend of red or white wine (and bottle it for you on the spot). After lunch, enjoy a tour and a "Your Moment in History" tasting in the Centennial Cellar at historic Seppeltsfield Winery, where you can taste a vintage port from a special year in your life – perhaps the year of your birth, marriage, etc. Return late afternoon to Adelaide, where you'll spend the evening and enjoy dinner as you please.

Day 3: Adelaide Sightseeing Choices

Adelaide's Central Market is one of the largest food emporiums in the Southern Hemisphere; 80 stalls offer a dazzling array of mouth-watering local produce, from vegetables to seafood, olive oils, artisan cheeses and baked goods, where you'll taste and explore with a local guide and enjoy free time on your own.  Then it's your choice of three ways in which to experience Adelaide. One is to explore the city with a local from the comfort of a pedicab on a morning EcoCaddy tour that highlights the city's diverse attractions, rich history and captivating natural landscapes effortlessly on a unique bamboo-bodied pedicab. Another is a tour of Adelaide's iconic Riverbank precinct via Segway*, led by an experienced Segway Sensations guide; no previous experience is required. And a third possibility is a climb on the roof of the Adelaide Oval sports stadium, some 50 meters above the stadium's green turf, for spectacular views of the city and its landscapes. Tonight, enjoy a dine-around at your choice from among several select Adelaide restaurants, all within walking distance of your hotel.

Day 4: The Fleurieu Peninsula
Head for the Fleurieu Peninsula south of Adelaide today for views of the spectacular Onkaparinga Gorge from Punchbowl Lookout; an off-road adventure through Onkaparinga River National Park; and a visit to the d'Arenberg Cube, a distinctive 5-story Rubik's cube-like building completed in 2017 on the grounds of the d'Arenberg Vineyards. After lunch, enjoy an incredibly scenic drive along the peninsula coast past Sellicks Beach, Maslin Beach and other shoreline communities back to Adelaide for an evening spent as you please.

Day 5: Discovering Melbourne

A morning flight takes you from Adelaide to Melbourne, the coastal capital of Victoria; where you'll take a guided walking tour along Melbourne's famous laneways and cobbled side streets; discover street art, arcades, cafes and small shops that give the city its intimate charm and character (and of course, its famous coffee). Check into your regal 5-star hotel in Parliament Square, overlooking St. Patrick's Cathedral and Fitzroy Gardens. The evening is at your leisure.

Day 6: The Great Ocean Road & the 12 Apostles

Drive from Melbourne to Port Campbell along the Great Ocean Road, one of the world's great scenic drives, with stops along the way. At Port Campbell, the otherworldly, towering array of limestone stacks known as the Twelve Apostles, rising from the sea along the shore, will leave you awestruck; you'll also explore Shipwreck Coast and the Gibson Steps. After lunch at Apollo Bay, enjoy some free time, make a chocolate stop near Anglesea, and visit Bells Beach before returning to your hotel in Melbourne for dinner this evening.

Day 7: Continue on to Tasmania

After flying this morning from Melbourne to Hobart, Tasmania, drive along the Freycinet Peninsula, stopping for Afternoon Tea at Kate's Berry Farm. Continue to your home for the next two nights, Saffire Freycinet. One of Australia’s premier luxury lodges, Saffire is spectacularly set adjacent to Freycinet National Park and Wineglass Bay; it overlooks Tasmania's Great Oyster Bay, where migrating whales and dolphins come to play, and its rooms enjoy views of the pink-hued granite Hazards Mountains. Enjoy dinner at your leisure tonight at your lodge.

Day 8: Choices in Freycinet National Park
You'll have a host of activities to choose from in or around Freycinet National Park from your Saffire resort today. Choices include a guided Lookout Walk along Wineglass Bay; a beekeeping experience; visits to a marine oyster farm or a local vineyard; a kayaking and birdwatching excursion; cooking or mixology demonstrations; or a Tasmanian Devil Experience. You can also enjoy archery, paddle boarding, mountain biking or fishing at the resort (some at an additional charge). After lunch at the lodge, spend the afternoon enjoying activities or free time; have dinner at your leisure this evening at the resort.

Day 9: Hobart and Art

Depart Saffire Freycinet today and drive to Hobart, Tasmania, nestled beside the Derwent Estuary at the foot of Mount Wellington. Established as a penal colony in 1804, Hobart today is a city of hip contemporary art and culture, its historic waterfront lined with old pubs, new cafes, galleries, museums, and award-winning restaurants. After lunch, check into your luxury waterfront hotel, then board a fast ferry (with first-class seats in the Posh Pit) and sail to the Museum of Old and New Art (MONA), located inside the Moorilla Winery on the Berriedale peninsula; the playful MONA offers old and new "conceptual" art in an underground museum, along with a restaurant, bar, cafe, and Moo Brew, a craft brewery. Enjoy an after-hours reception here, followed by dinner featuring a Tasmanian "feasting menu."

Day 10: Historic Port Arthur & a Cruise

Separated from Tasmania by a narrow neck of land, the prison at Port Arthur was built in the 19th century to house hardened criminals sent from Britain. The historic remains of its more than 30 buildings, including the gothic-style church (built by convicts), are now an open-air museum (part of a UNESCO World Heritage Site) where you'll take a guided tour, hear compelling stories, and learn about convict life there; you'll also take a cruise around the rocky islands and towering cliffs for a sense of why Port Arthur was believed to be "inescapable." Return to Hobart and dine tonight at your choice of a selection of local restaurants.

Day 11: Adventures on wild Bruny Island

Ride a ferry to Bruny Island (two land masses connected by a narrow spit of land) for a choice of wildlife-related activities. Embark on a Wilderness Cruise of the D'Entrecasteaux Channel for close-up looks at the spectacular sheer cliffs and rock islands and geologic wonders along the coast, including the craggy tower known as The Monument and the sea cave called Breathing Rock; the cliffs are home to gannets, pardalotes, shearwaters, swift parrots, sea eagles and falcons, while dolphins, seals and whales frequent the waters. Or, if you prefer to explore on dry land, head out on a Bruny Island Traveler Tour, exploring spectacular landscapes and gourmet local produce – a delicious day out where every course on the menu is a stop on the journey. You'll visit the home of Bruny Island cheese, oysters, fudge, honey, wine and whisky to savor their produce and hear stories behind the harvest. Throughout the day, you'll see incredible scenery; you can take a stroll on a deserted beach and keep an eye out for the rare white wallabies found on the island. Return to Hobart via ferry for a free evening on your own and dinner as you please.

Day 12: Bonorong and a Richmond Winery

Start the day with a drive from Hobart to Brighton for a private behind-the-scenes visit to Bonorong Wildlife Sanctuary, whose mission is rescuing and caring for indigenous animals and returning them to the Tasmanian wild; here you can meet Tasmanian devils, blue-tongued lizards, bettongs, koalas, and quolls, and animals that went extinct long ago in other parts of Australia. Next, visit Richmond, a charming village of Georgian architecture, famous as a destination for food and wine lovers, for time exploring on your own. Drop in at Pooley Wines, an elegant Georgian property with vineyards and a garden, for a cellar-door wine tasting and lunch. Return to Hobart for an afternoon and evening spent as you please; dine at leisure tonight at your hotel.

Day 13: Sydney, Bondi Beach & the Opera House

After a morning flight to Sydney, take an introductory sightseeing tour of the city that includes Bondi Beach, named for the suburb it's in, and known as one of the best beaches in the world for its pristine sands, surfing, warm temperatures and easy lifestyle. Later, enjoy a private tour of one of the world's best-known modern buildings, the iconic Sydney Opera House. Spend the rest of the afternoon exploring on your own. Your waterfront luxury hotel is in the Darling Harbour district, one of Sydney's largest dining, shopping, and entertainment locations, in easy reach of the Sea Life Aquarium and the National Maritime Museum, as well as wine bars, bistros, and nightclubs. Dine at the hotel this evening.

Day 14: Sydney Sightseeing & a Harbour cruise

Get a private guided tour of some of the city's lesser-known sights with a Sydney local; then take a sightseeing cruise with lunch around Sydney Harbour. This afternoon, head into the Blue Mountains for a visit and afternoon tea at a bird sanctuary. Join us this evening for a farewell reception and a traditional Australian "barbie" farewell dinner at a private home outside Sydney.
